Coconut & Almond Cookies

I promise you, you will not regret it. They are delicious and at 1g of net carbs and only 89 cals, you could have two you know....


 


INGREDIENTS

1 cup Almond Flour 1/2 cup Monk Fruit Pinch of Salt 1 tsp Chia Seeds 1/4 cup Water 1 tsp Almond Extract 3 tbs Shredded Coconut (unsweetened) 1 tbs Melted Coconut Oil 1 tsp Baking Powder 1 egg Some sliced Almonds as topping 


 

DIRECTIONS

  • In a small bowl, mix water, chia seeds, monk fruit and almond extract - let sit for about 10 minutes.

  • Mix all other dry ingredients.

  • Use hand mixer to combine wet and dry ingredients. Add egg and melted coconut oil to the mix.

  • Preheat oven to 350 F.

  • Using a small spoon, drop about 13 cookies on parchment paper. Leave room for cookies to expand. 

  • Top with sliced almonds.

  •  Bake at 350 F for about 20 minutes. - Let cool
