I promise you, you will not regret it. They are delicious and at 1g of net carbs and only 89 cals, you could have two you know....
1 cup Almond Flour 1/2 cup Monk Fruit Pinch of Salt 1 tsp Chia Seeds 1/4 cup Water 1 tsp Almond Extract 3 tbs Shredded Coconut (unsweetened) 1 tbs Melted Coconut Oil 1 tsp Baking Powder 1 egg Some sliced Almonds as topping
In a small bowl, mix water, chia seeds, monk fruit and almond extract - let sit for about 10 minutes.
Mix all other dry ingredients.
Use hand mixer to combine wet and dry ingredients. Add egg and melted coconut oil to the mix.
Preheat oven to 350 F.
Using a small spoon, drop about 13 cookies on parchment paper. Leave room for cookies to expand.
Top with sliced almonds.
Bake at 350 F for about 20 minutes. - Let cool
